For a milder salad, reduce the amount of Thai chiles used in the dressing. If you don't have a mortar and pestle, you can finely mince the garlic and chiles and mix them directly into the dressing. Feel free to add other vegetables to the salad, such as shredded carrots, bean sprouts, or sliced bell peppers. For a vegetarian version, omit the fish sauce and substitute with soy sauce or tamari. The salad can be made ahead of time, but it's best to add the dressing just before serving to prevent the noodles from becoming soggy.
