Lightly coat the crock of a five-quart slow cooker with cooking spray. (2 minutes)

Season the pork roast generously with salt and pepper. Place it in the prepared slow cooker. (5 minutes)

Evenly spread the drained and rinsed sauerkraut over and around the pork roast. Gently pour the light beer over the sauerkraut. Sprinkle the brown sugar evenly over the sauerkraut, then top with the diced onion and dot with small pieces of butter. Season everything again with a pinch of salt and pepper. (10 minutes)

Cover and cook on Low for 8 hours, or until the pork is very tender. (8 hours)

For a richer flavor, consider using a slightly darker beer such as a pilsner or pale ale.
If you prefer a sweeter flavor, add an additional tablespoon of brown sugar.
Serve this hearty dish with creamy mashed potatoes or scalloped potatoes to soak up all the delicious juices.
