Ensure the foil does not touch the contents to allow for proper steaming. Lift each end of the packet and pinch closed to completely seal. Place the sealed packets on a rimmed baking sheet. Bake in the preheated oven for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork. For precise doneness, an instant-read thermometer inserted into the center of a filet through the foil packet should read 145°F (63°C). (15 minutes)

To serve, carefully place the foil packs on individual serving plates. Open each packet, allowing the fragrant steam to escape. Drizzle with any remaining olive oil from the packet, garnish with fresh parsley sprigs, and serve immediately with lemon wedges for squeezing. (2 minutes)

For enhanced flavor, marinate the salmon in the tomato mixture for 30 minutes prior to baking.
Feel free to customize the vegetables based on your preferences. Bell peppers, zucchini, or sun-dried tomatoes would be delicious additions.
If you prefer a crisper topping, broil the salmon packets for the last 2-3 minutes of cooking, keeping a close watch to prevent burning.
