In a slow cooker, create a bed of thinly sliced onions and carrots. Layer the chicken thighs over the vegetables, then sprinkle the raisins and chopped dried apricots evenly on top. (5 minutes)

In a separate bowl, whisk together the chicken broth, tomato paste, lemon juice, all-purpose flour, garlic salt, ground cumin, ground ginger, ground cinnamon, Hungarian paprika, and ground black pepper until well combined. Pour this flavorful mixture over the chicken and vegetables in the slow cooker. (5 minutes)

Cover the slow cooker and cook on High for 4 1/2 hours or on Low for 7 1/2 hours, or until the chicken is incredibly tender. Once cooked, gently shred the chicken using two forks directly in the slow cooker. Allow the shredded chicken to simmer in the sauce for an additional 30 minutes to absorb the flavors. (30 minutes)

While the chicken simmers, prepare the couscous. In a saucepan, bring 3 cups of water to a rolling boil. Remove the saucepan from the heat and stir in the couscous and butter. Cover the saucepan tightly and let it stand undisturbed until all the water is completely absorbed by the couscous, approximately 5 to 10 minutes. (10 minutes)

Once the couscous is ready, fluff it gently with a fork to separate the grains. Serve the slow cooker chicken tagine generously over a bed of fluffy couscous. Garnish with fresh cilantro or parsley for an extra touch of freshness (5 minutes).

For a richer flavor, try browning the chicken thighs in a skillet before adding them to the slow cooker.
Adjust the amount of spices according to your taste preferences. If you prefer a spicier tagine, add a pinch of cayenne pepper or a dash of hot sauce.
Feel free to substitute other dried fruits, such as dates or figs, for the raisins and apricots.
Serve with a dollop of Greek yogurt or a sprinkle of toasted almonds for added texture and flavor.
