Preheat your oven's broiler to high. (5 minutes)

Place the red bell peppers on a baking sheet. Broil on the top rack, turning frequently with tongs, until all sides are blackened. (15-20 minutes)

Transfer the blackened peppers to a plastic bag, seal loosely, and let steam for 15 minutes. This will make the skins easier to peel.

Remove the peppers from the bag. Peel off the blackened skin, remove the stems, cores, and seeds. Cut the peppers into wide strips. (10 minutes)

In a food processor, combine the roasted pepper strips, tomato paste, mayonnaise, sour cream, vinegar, minced garlic, and cayenne pepper. Pulse until almost smooth, about 7-8 times. (5 minutes)

Taste and adjust seasoning with salt, if needed. (2 minutes)

Refrigerate the dip for at least 30 minutes to allow the flavors to meld before serving. (30 minutes)

For an even smokier flavor, roast the peppers over an open flame on a gas stove or grill before placing them in the plastic bag.
Use high-quality mayonnaise and sour cream for the best flavor.
The dip can be stored in an airtight container in the refrigerator for up to 3 days.
