For a spicier kick, use a spicier enchilada sauce or add another serrano chile. Feel free to substitute your favorite vegetables. Mushrooms, bell peppers of other colors, or butternut squash would all be delicious additions. To make ahead, assemble the enchiladas and refrigerate for up to 24 hours before baking. Add an extra 5-10 minutes to the baking time if baking from cold.
