Preheat your oven to 425 degrees F (220 degrees C). (5 minutes)

Brush the cut sides of the squash generously with olive oil and sprinkle evenly with salt. Place the squash halves cut-side up in a baking pan. Cover the pan tightly with aluminum foil to trap the steam.

Roast in the preheated oven for 20 minutes. Carefully remove the foil and continue roasting until the squash is tender and easily pierced with a fork, about 35 minutes more. (55 minutes)

Let the squash cool slightly, about 5 minutes. Use a fork to scrape the flesh into long, spaghetti-like strands. Transfer to a large bowl and toss with freshly grated Parmesan cheese. Serve immediately.

For a richer flavor, try roasting the squash with a drizzle of balsamic vinegar along with the olive oil and salt.
To add some heat, sprinkle a pinch of red pepper flakes over the squash before roasting.
Roasted spaghetti squash can be stored in the refrigerator for up to 3 days. Reheat gently in the microwave or oven before serving.
