Heat olive oil in a large soup pot or Dutch oven over medium heat until shimmering, about 1 minute. Add diced potatoes, onion, carrots, and celery. Cook, stirring occasionally, until the vegetables begin to soften, about 3-4 minutes. Add the chopped garlic, red pepper flakes, salt, and black pepper. Continue to cook, stirring frequently, until fragrant, about 2-3 minutes.

Add the chopped kale and bay leaves to the pot. Cover and cook until the kale wilts slightly, about 2-3 minutes.

Pour in the chicken broth, then add the garbanzo beans with their liquid, diced tomatoes, linguica sausage, and chorizo sausage. Bring the mixture to a boil, about 5 minutes, then reduce the heat to medium-low. Simmer gently until the vegetables are tender and the flavors have melded, about 15 minutes.

For a richer flavor, use homemade chicken broth.
Adjust the amount of red pepper flakes to suit your spice preference.
If you don't have kale, spinach or collard greens can be substituted.
Serve with a drizzle of olive oil and a sprinkle of fresh parsley for an extra touch of flavor.
