While the pork and hominy simmer, prepare the chile sauce. In a small saucepan, combine the dried chile de arbol peppers with 2 cups of water. Cover and boil for 45 minutes, until the chiles are softened.

Drain the chiles, remove the stems, and transfer them to a blender. Add 1/4 cup of fresh water, the chopped onion, and minced garlic to the blender. Blend until you achieve a smooth sauce, though some seeds may remain for added texture and heat.

Serve the Pork and Hominy Stew in bowls. Garnish generously with fresh lime juice, chopped cilantro, and shredded cabbage for a refreshing crunch.

For those who crave an extra kick, stir one teaspoon (or more, to taste) of the prepared chile sauce into each bowl of stew. Enjoy with warm corn tortillas on the side.

Adjust the amount of chile de arbol peppers to control the spiciness of the stew. For a milder flavor, remove some of the seeds from the peppers before blending.
For a richer flavor, consider using pork shoulder instead of pork roast. It may require a longer cooking time to become tender.
The stew tastes even better the next day, as the flavors have had more time to develop. Store leftovers in an airtight container in the refrigerator for up to 3 days.
