For a richer flavor, sauté the diced onion, carrots, and garlic in olive oil until softened before adding them to the soup. A bay leaf added during the simmering process can enhance the depth of flavor. Remember to remove it before serving. If you prefer a thicker soup, you can blend a portion of the soup (about 1-2 cups) before serving and stir it back into the pot. This soup is even better the next day, as the flavors continue to develop.
