In a small bowl, combine the jerk seasoning, salt, and black pepper. Set the spice rub aside.

Heat olive oil in a large skillet over medium heat. Add about 1 tablespoon of the jerk rub and the diced onion. Cook, stirring occasionally, until the onion softens, approximately 3 minutes.

While the onion cooks, sprinkle half of the remaining jerk rub evenly onto one side of each pork chop. Using the tip of a knife, poke 4 or 5 holes into each chop to help the flavors penetrate. Drizzle half of the lime juice over the seasoned side of the chops. Place the pork chops, seasoned-side down, into the hot skillet.

Cook the chops until nicely browned, about 5 to 7 minutes. While the chops are cooking, sprinkle the remaining jerk rub onto the top sides of the chops, again poking 4 or 5 holes into each. Drizzle the remaining lime juice over the top. Flip the chops and continue to cook until browned and no longer pink in the centers, another 5 to 7 minutes. Ensure an instant-read thermometer inserted into the center of a chop reads 145 degrees F (63 degrees C).

For best results, use a high-quality Jamaican jerk seasoning blend. Adjust the amount to your preferred level of spiciness.
Ensure the skillet is hot before adding the pork chops to achieve a good sear.
Serve these jerk pork chops with your favorite sides, such as sweet potato fries, steamed potatoes, fresh vegetables, or classic applesauce.
Marinating the pork chops in the jerk rub and lime juice for 30 minutes prior to cooking will enhance the flavor even further.
