Follow The Directions

01

Step

Melt butter in a large, oven-safe skillet over medium-high heat. (2 minutes)

02

Step

Season pork chops generously with salt and pepper. Sear in the hot butter until deeply golden brown on both sides, about 5 minutes per side. Remove chops from the skillet and set aside on a plate. (10 minutes)

03

Step

Add diced onion to the skillet and cook in the pork drippings until softened and translucent, about 3 minutes. Add minced garlic and cook until fragrant, about 1 minute. (4 minutes)

04

Step

Pour in the Shiraz wine, deglazing the pan by scraping up any browned bits from the bottom. Reduce heat to medium and simmer until the wine has reduced slightly and the alcohol smell has dissipated, about 3-4 minutes. (4 minutes)

05

Step

Stir in condensed cream of mushroom soup and milk until well combined and smooth. Layer sliced mushrooms evenly over the soup mixture. (3 minutes)

06

Step

Nestle the seared pork chops on top of the mushrooms, and drizzle any accumulated meat drippings from the plate over the chops. Sprinkle with chopped thyme and sage. (2 minutes)

07

Step

Cover the skillet tightly with a lid or aluminum foil. Transfer to a preheated oven at 350°F (175°C) and bake until the pork chops are tender and cooked through, about 30 minutes, or until an instant-read thermometer inserted into the center of a chop registers 145°F (63°C). (30 minutes)

08

Step

Remove from oven and let rest for 5 minutes before serving.

For a richer flavor, use heavy cream instead of milk.
If you don't have Shiraz, a Merlot or other dry red wine will work well.
Serve over creamy mashed potatoes, egg noodles, or a bed of fluffy rice for a complete and satisfying meal.
To ensure even cooking, use pork chops that are of uniform thickness.
