In a large pot, combine the beets, potatoes, carrots, parsley root (reserving the greens), celery, and white vinegar. Season generously with salt and pepper. Add enough water to cover the vegetables. Bring to a boil, then reduce the heat to low. Simmer gently until the vegetables are tender, approximately 45 minutes.

Carefully remove the beets from the pot using a slotted spoon. Allow them to cool slightly, about 10 minutes, until they are easy to handle. Once cooled, grate the beets.

In a separate small saucepan, melt the butter over medium heat. Whisk in the flour, cooking and stirring continuously until the mixture develops a light tan color, about 10 minutes. Stir this roux into the simmering soup, ensuring it's fully incorporated.

Add the grated beets and chopped parsley root greens to the soup. Bring it back to a gentle simmer and cook until heated through, approximately 5 minutes. Season the soup with vegetable bouillon, salt, and pepper to your liking.

For an extra layer of richness, consider using homemade vegetable stock instead of water.
A dollop of sour cream or crème fraîche and a sprinkle of fresh dill elevate the presentation and flavor of this borscht.
Adjust the amount of vinegar to your taste preference. Some prefer a more pronounced sourness.
If you don't have parsley root, you can substitute with parsnip.
