Follow The Directions

01

Step

Blanch the kale: Bring a pot of water to a boil, add the chopped kale, and cook for 1 minute. Remove with a slotted spoon and set aside. (1 minute)

02

Step

Render the bacon and sauté the onion: In a large skillet over medium heat, cook the chopped bacon until browned and crispy, stirring frequently. Add the chopped onion and cook until translucent. (13 minutes)

03

Step

Combine and simmer: Stir in the blanched kale and cook until it turns bright green and starts to become tender. Pour in enough water to cover the mixture and bring to a boil. Reduce the heat to a simmer, then stir in the beef bouillon granules and nutmeg. Simmer until the kale is tender. (34 minutes)

04

Step

Finish the dish: Stir the mustard into the skillet. Arrange the ham slices and sausage links over the kale mixture. Simmer until the sausage is thoroughly cooked. Season with salt and black pepper to taste. (35 minutes)

For a richer flavor, consider using smoked bacon.
Adjust the amount of mustard to your liking. Some prefer a more subtle flavor, while others enjoy a tangier taste.
Serve hot with boiled potatoes for a traditional Northern German experience.

The kale was perfectly tender, not bitter at all. Blanching it made a big difference.
