Pour the mustard mixture into a heatproof bowl. Place the bowl over a pot of simmering water, ensuring the bottom of the bowl doesn't touch the water. Cook, stirring constantly, until the mixture thickens to the consistency of a custard. This should take approximately 10-15 minutes. (15 minutes)

Remove the bowl from the heat and allow the custard to cool completely. You can speed this up by placing the bowl in an ice bath, stirring occasionally. (30 minutes)

In a separate bowl, whip the heavy cream using an electric mixer until soft peaks form. (5 minutes)

Gently fold the whipped cream into the cooled mustard custard, ensuring not to deflate the cream. Mix until just combined, creating a light and airy mousse. (5 minutes)

Lightly grease a 1-quart ring mold or any decorative mold of your choice. Pour the mustard-cream mixture into the mold. (2 minutes)

Cover the mold with plastic wrap and chill in the refrigerator for at least 8 hours, or preferably overnight, to allow the mousse to set completely. (480 minutes)

To serve, unmold the mousse onto a serving platter and present alongside your favorite ham. Enjoy the delightful combination of flavors!

For a smoother mousse, strain the mustard mixture through a fine-mesh sieve after cooking and before cooling.
If you don't have a ring mold, you can use individual ramekins for an elegant presentation.
