In a saucepan, bring water and rice to a boil. (2 minutes)

Reduce heat to medium-low, cover, and simmer until rice is tender and the liquid has been absorbed (18-20 minutes).

Season with the remaining 1 tablespoon of olive oil, lemon juice, and salt.(1 minute)

For an extra layer of flavor, consider adding crumbled feta cheese or Kalamata olives.
Feel free to experiment with different vegetables, such as cucumbers, tomatoes, or artichoke hearts.
To make this salad ahead of time, prepare the rice and vegetables separately and combine them just before serving.
