Follow The Directions

01

Step

Preheat the oven to 425 degrees F (220 degrees C). Position a roasting rack inside a rimmed baking sheet. Ensure the chicken is thoroughly dry by patting it with paper towels. (5 minutes)

02

Step

Zest 1 teaspoon of lemon zest into a small mixing bowl. Quarter the remaining lemon. Place the lemon quarters, along with the quartered onion and halved garlic, inside the chicken cavity. (10 minutes)

03

Step

In the bowl containing the lemon zest, add the mayonnaise, vinegar, honey, Worcestershire sauce, and cayenne pepper. Mix until well combined. Generously rub the mayonnaise mixture all over the chicken, ensuring to get some underneath the skin, especially over the breast. Evenly sprinkle the chicken with kosher salt and black pepper. (10 minutes)

04

Step

Roast in the preheated oven until the chicken is cooked through and the juices run clear when pierced with a fork, approximately 50 to 60 minutes. To ensure accuracy, an instant-read thermometer inserted into the thickest part of the thigh, near the bone, should register 165 degrees F (74 degrees C). If the chicken begins to brown too quickly, tent it with foil halfway through cooking. Allow the chicken to rest for 10 minutes before carving and serving. (60 minutes)

For extra flavor, consider adding fresh herbs like rosemary or thyme to the chicken cavity.
Ensure the chicken is thoroughly dry before applying the mayonnaise mixture for optimal skin crispness.
Don't skip the resting period! This allows the juices to redistribute, resulting in a more tender and flavorful bird.
