For an extra smoky flavor, add a handful of wood chips (such as hickory or mesquite) to your grill's smoker box or a foil pouch. Don't skip the coarse salt! It makes a huge difference in the texture and flavor of the potato skin. Feel free to experiment with different seasonings. Onion powder, smoked paprika, or chili powder would all be delicious additions. If you don't have a grill, you can bake these potatoes in the oven at 375°F (190°C) for 1 hour, or until tender.
