Bring the stew back to a boil, then reduce the heat to low, cover, and simmer gently for 20 minutes, or until the lentils are tender and the stew has thickened slightly, stirring occasionally to prevent sticking. (Approximately 20 minutes)

For a vegetarian version, omit the sausage and add a tablespoon of smoked paprika for a smoky flavor.
This stew tastes even better the next day, as the flavors have had time to meld. Store leftovers in an airtight container in the refrigerator for up to 3 days.
Feel free to add other vegetables to the stew, such as carrots, celery, or bell peppers.
A bay leaf added during the simmering process can enhance the depth of flavor. Remember to remove it before serving.
