Squid & Cabbage Sauté: In a skillet, heat vegetable oil over medium-high heat. Add the diced squid and thinly sliced cabbage. Sauté with Japanese soy sauce until the cabbage is slightly softened and the squid is lightly browned. (Approximately 5 minutes)

Assembly: Arrange the sautéed squid and cabbage on a serving plate. Top with the fried tater drums, followed by a generous drizzle (about 1/3 cup) of the homemade teriyaki sauce and a dollop of mayonnaise. Sprinkle with dried fish flakes and roasted shredded seaweed. Serve immediately.

For a vegetarian option, substitute the squid with shiitake mushrooms or firm tofu, ensuring to press out excess water before dicing and sautéing.
Adjust the amount of tapioca flour in the teriyaki sauce to achieve your preferred thickness. A thicker sauce will cling better to the potato bites.
