Place a cast iron skillet over medium heat and add 1/2 tablespoon of butter. Once melted, place one tortilla in the pan, cream cheese side up. Sprinkle 1/3 cup of the shredded cheese over the entire surface of the tortilla. Place half of the cooked egg mixture over one half of the tortilla. Sprinkle half of the sliced green onions over the eggs. Cook over medium to medium-low heat until the cheese is melted and the tortilla is golden brown, then fold the tortilla in half. (5 minutes)

Remove the quesadilla to a cutting board and let it rest for 1-2 minutes before slicing. Repeat with the remaining tortilla and egg mixture. Serve immediately with sour cream and salsa. (7 minutes)

For a spicier kick, leave some of the jalapeño seeds in. If you prefer a milder flavor, be sure to remove all the seeds and membranes.
Feel free to substitute the Canadian bacon with cooked bacon, chorizo, or any other breakfast meat you enjoy.
For a vegetarian option, omit the Canadian bacon and add sautéed vegetables like bell peppers, onions, or mushrooms.
The type of cheese used can be customized to your preference. Pepper jack cheese would add extra heat, while Monterey Jack would provide a milder flavor.
Make sure your pan is hot before adding your tortilla so it doesn't stick.
