Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add diced onion and celery; sauté until softened and translucent, about 5 minutes.

Add ground beef (or sausage) and cook, breaking it up with a spoon, until browned and cooked through, about 7 minutes. Drain off any excess grease.

Stir in crushed stewed tomatoes and tomato paste until well combined. Add sliced mushrooms, Parmesan cheese, parsley, salt, sugar, nutmeg, oregano, and black pepper. Bring to a simmer.

Reduce heat to low, cover partially, and simmer for at least 1 hour, or up to 3 hours, stirring occasionally to prevent sticking. The longer it simmers, the richer the flavor will become.

Stir in baking soda. This will help to neutralize the acidity of the tomatoes. Continue simmering for another 10 minutes, stirring occasionally.

For a vegetarian option, omit the meat and add a can of drained and rinsed cannellini beans along with the tomatoes.
If you like a smoother sauce, use an immersion blender to partially blend the sauce after simmering.
Taste and adjust seasonings as needed. You may want to add a pinch more salt, pepper, or sugar to balance the flavors.
This sauce freezes well. Allow it to cool completely before transferring to freezer-safe containers or bags. It will keep in the freezer for up to 3 months.
