For a richer flavor, try using vegetable broth or mushroom broth instead of chicken broth. Add a splash of white wine along with the broth for extra depth. If you don't have fresh spinach, frozen spinach can be used. Just be sure to squeeze out any excess moisture before adding it to the pot.
