For a creamier slaw, use a full-fat mayonnaise. Adjust the amount of horseradish to your preference. Start with 3 tablespoons and add more if desired. If you don't have stone-ground mustard, Dijon mustard can be substituted, but the flavor will be slightly different. For a sweeter slaw, increase the sugar slightly. This slaw can be made a day in advance. The flavors will continue to meld and improve overnight.
