Prepare the grill: Preheat an outdoor grill to medium-high heat (about 375-450°F) and lightly oil the grate. (5 minutes)

Cut the cauliflower steaks: Place each cauliflower head stem-side up on a cutting board. Carefully cut two 1 to 1 1/2-inch thick "steaks" from the center of each head. You should get about 4 steaks total. Reserve the remaining florets for another use (like roasting!). Remove any small remaining leaves from each steak.

Brush with vinaigrette: Place the cauliflower steaks on a baking sheet and brush one side generously with the olive oil mixture.

Grill the steaks: Place the steaks on the preheated grill, oiled-side down. Grill for 5 minutes. Brush the tops with more of the oil mixture, then gently flip the steaks. Grill for another 5-7 minutes, or until golden brown and slightly charred, adjusting the cooking time as needed.

Finish and serve: Remove the grilled cauliflower steaks to a platter and drizzle with truffle oil. Sprinkle generously with Parmesan cheese and minced fresh parsley. Serve immediately.

For softer cauliflower, microwave the steaks for 3-4 minutes before grilling.
Try using a balsamic glaze in place of truffle oil for a different flavor profile.
Add a pinch of red pepper flakes to the oil mixture for a little heat.
