In a mixing bowl, combine the softened butter, minced garlic, hot sauce, and freshly ground black pepper. Mix thoroughly until all ingredients are well incorporated. Set aside your garlic butter mixture. (5 minutes)

Preheat your outdoor grill to medium-high heat (approximately 375-450°F or 190-230°C). Ensure the grill grate is clean and lightly oiled to prevent sticking. (10 minutes)

Prepare the lobster tails: Using kitchen shears, carefully cut lengthwise through the center of the hard top shells. Cut about halfway through the top of the lobster meat. Gently separate the shell halves with your fingers, creating a butterfly effect. Flip the tails over and insert a skewer lengthwise through each tail to prevent curling during grilling. Brush the lobster meat with olive oil and season generously with kosher salt. (15 minutes)

Grill the lobster tails: Place the lobster tails shell-side down on the preheated grill. Grill for 5 to 8 minutes, or until the shells turn a vibrant, bright color. Flip the tails and spoon approximately 1 tablespoon of the prepared garlic butter mixture onto the butterflied meat of each tail. Continue grilling for an additional 4 to 7 minutes, or until the lobster meat is opaque and white. Baste once more with the garlic butter mixture during the last few minutes of grilling. (12 minutes)

Remove the grilled lobster tails from the grill. Serve immediately with the remaining garlic butter and fresh lemon wedges. (2 minutes)

For an extra layer of flavor, consider adding a squeeze of fresh lemon juice to the garlic butter mixture.
To prevent the lobster meat from becoming tough, avoid overcooking it. The internal temperature should reach approximately 140°F (60°C).
If you don't have skewers, you can skip this step, but be aware that the tails may curl up during grilling.
