Zest and juice 4 lemons; reserve remaining 2 whole. (Prep time: 5 minutes)

In a bowl, whisk together olive oil, lemon zest and juice, rosemary, sage, garlic, and crushed red pepper. (Prep time: 5 minutes)

Place chicken thighs in a single layer in a dish. Massage with the herb mixture. Cover and refrigerate for at least 8 hours, or preferably overnight. (Marination time: 8 hours to overnight)

Preheat an outdoor grill for medium heat and lightly oil the grate. (Prep time: 10 minutes)

Remove chicken from marinade and pat dry. Season generously with salt and drizzle with olive oil. (Prep time: 5 minutes)

Cut the 2 whole lemons in half and cut the tips off of the ends; this will allow the lemons to stand up without rolling around. (Prep time: 2 minutes)

Place the chicken, skin side-down, on the preheated grill. Grill for 3-4 minutes, then rotate 90 degrees to create a crosshatch pattern. Grill another 3-4 minutes, then turn and grill until no longer pink and juices run clear, approximately 4-5 minutes more. Ensure an internal temperature of 165°F (74°C). (Cook time: 10-13 minutes)

At the same time, grill the lemons, flesh-side down, until caramelized. Flip and grill on the bottom for 2-3 minutes. Serve the grilled chicken with the caramelized lemons. (Cook time: 5-7 minutes)

For best results, marinate the chicken overnight to allow the flavors to fully penetrate the meat.
If you don't have an outdoor grill, you can use a grill pan on your stovetop or bake the chicken in the oven at 400°F (200°C) for 25-30 minutes, or until cooked through.
Serve with a side of roasted vegetables or a fresh salad for a complete and balanced meal.
