Follow The Directions

01

Step

Prepare the Chicken (5 minutes): Pat the chicken breasts dry with paper towels. Lightly score the surface of each breast with a sharp knife in a crosshatch pattern. This helps the marinade penetrate and keeps the chicken tender.

02

Step

Marinate the Chicken (15-30 minutes): In a shallow dish, whisk together the lemon zest, lemon juice, salt, garlic powder, smoked paprika, black pepper, olive oil, and thyme (if using). Add the chicken breasts and turn to coat thoroughly. Cover and marinate in the refrigerator for at least 15 minutes, or up to 30 minutes for a deeper flavor.

03

Step

Preheat the Grill (5 minutes): Preheat an outdoor grill to medium heat (about 350-400°F or 175-200°C) and lightly oil the grill grate. Alternatively, preheat a grill pan over medium-high heat.

04

Step

Grill the Chicken (8-10 minutes per side): Remove the chicken from the marinade, letting any excess drip off. Reserve the remaining marinade. Grill the chicken breasts for 8-10 minutes per side, or until cooked through and the internal temperature reaches 165°F (74°C).

05

Step

Baste and Finish (2-3 minutes): During the last few minutes of grilling, baste the chicken with the reserved marinade and brush with melted butter. Sprinkle with sugar. Continue grilling for 2 minutes more to allow the sugar to caramelize slightly.

06

Step

Rest and Serve (5 minutes): Remove the chicken from the grill and let it rest for 5 minutes before serving. This allows the juices to redistribute, resulting in a more tender and flavorful breast. Serve immediately with lemon wedges.

For extra flavor, add a clove of minced garlic to the marinade.
Don't overcook the chicken, or it will become dry. Use a meat thermometer to ensure it reaches 165°F (74°C).
If you don't have a grill, you can pan-fry the chicken in a skillet over medium heat.
Serve with your favorite sides, such as grilled vegetables, rice, or a salad.
