In a separate bowl, whisk together the oyster sauce, 2 tablespoons of mirin, rice wine vinegar, honey, soy sauce, cornstarch, and sesame oil until the sauce is smooth and well combined. Set aside. (Prep time: 3 minutes)

Prepare the vegetables: Trim and halve the green beans. Slice the white onion in half, then cut into uniform ¼-inch wedges. Set aside. (Prep time: 7 minutes)

Heat 1 tablespoon of peanut oil in a wok or large skillet over medium-high heat. Add the sliced onion and cook, stirring frequently, for 1 minute. Incorporate the halved green beans and continue to cook and stir for another 2 minutes. Pour in 2 tablespoons of water and allow it to evaporate while continuing to cook until the green beans are crisp-tender, approximately 2 more minutes. Transfer the green bean mixture to a large bowl and set aside. (Cook time: 5 minutes)

Reheat the wok or skillet over high heat with the remaining 1 tablespoon of peanut oil. Add the marinated chicken in a single layer and sear for 1 minute without disturbing. If necessary, cook the chicken in batches to avoid overcrowding the pan. Flip the chicken over and stir-fry for another minute. Add the minced garlic and stir frequently for 2 minutes until fragrant. (Cook time: 5 minutes)

Return the green bean mixture to the wok, followed by the prepared sauce. Stir continuously to combine all the ingredients, and cook for an additional 1 to 2 minutes, allowing the sauce to thicken and everything to heat through evenly. (Cook time: 2 minutes)

For a spicier dish, add a pinch of red pepper flakes to the sauce or a dash of your favorite chili oil at the end.
If you don't have peanut oil, vegetable oil or canola oil can be used as substitutes.
To make this dish vegetarian, substitute the chicken with firm tofu, cut into similar-sized strips.
Make sure your wok is very hot before adding the chicken; this will ensure a nice sear and prevent the chicken from sticking.
