To test if the griddle is ready, sprinkle a few drops of water onto the surface; it should sizzle and dance around. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface and the edges appear dry, about 2 to 3 minutes. Flip the pancakes and cook until they are golden brown on the other side, about 2 to 3 minutes more. Repeat with the remaining batter, adding more butter to the griddle as needed to prevent sticking. (Approximately 20-25 minutes)

For a richer flavor, use browned butter to sauté the plantains.
Ensure the plantains are ripe (yellow with some black spots) for the best sweetness.
If the batter seems too thick, add a tablespoon of milk at a time until it reaches a pourable consistency.
