Heat a large skillet over medium-high heat. Fry bologna slices in the hot skillet until browned and slightly crispy on both sides, about 1-2 minutes per side. Drain on a paper towel-lined plate to remove excess grease. Wipe excess grease from the skillet, reduce heat to medium, and melt butter. Add chopped onion and cook, stirring occasionally, until softened and translucent, about 5-7 minutes. Stir the sautéed onion into the warm mashed potatoes, ensuring it's evenly distributed. (15 minutes)
