Follow The Directions

01

Step
5 mins

In the bowl of a stand mixer fitted with the paddle attachment, combine the sifted powdered sugar and softened butter. Beat on medium speed until the mixture is light, fluffy, and well combined, about 5 minutes.

02

Step
0 mins

Add the cocoa powder, vanilla extract, and salt to the bowl. Mix on low speed until just combined, about 30 seconds. Be careful not to overmix at this stage.

03

Step
0 mins

With the mixer running on low, add the heavy cream one tablespoon at a time, allowing each addition to fully incorporate before adding the next. Scrape down the sides of the bowl as needed.

04

Step
3 mins

Increase the mixer speed to medium and beat until the frosting is light, airy, and appears to have large, glossy bubbles, about 3 to 5 minutes more. Be careful not to overwhip the frosting, as this can cause it to become too soft.

For an even smoother frosting, sift the powdered sugar before adding it to the mixer.
Ensure the butter is properly softened but not melted. It should yield easily to gentle pressure.
Dutch-process cocoa powder will provide a richer, less acidic chocolate flavor.
Adjust the amount of heavy cream to achieve your desired consistency. Add more for a thinner frosting, less for a thicker one.
This frosting can be stored in an airtight container in the refrigerator for up to 3 days. Allow it to come to room temperature and re-whip before using.

The key is to make sure your butter is properly softened. Mine was a little too cold and the frosting was a bit lumpy, but it still tasted great!

  • Anastasia Osinski

I followed the recipe exactly and it turned out perfect! My cake looked and tasted like it came from a bakery.

  • Melyssa Kirlin

This frosting is amazing! It's so light and not too sweet, which is exactly what I was looking for.
