While the green beans are baking, pat the mahi mahi fillets dry with paper towels. In a small mixing bowl, whisk together the melted butter, lemon juice, and minced garlic. (7 minutes)

Remove the sheet pan from the oven. Gently toss the green beans. Spray the empty portion of the pan with cooking spray. Add the drained diced tomatoes and green chiles and chopped onion to the pan; toss to combine. For extra flavor, marinate the mahi mahi in the lemon-garlic mixture for 30 minutes before baking.
If you don't have green beans, broccoli florets or asparagus spears make excellent substitutes.
A squeeze of fresh lime juice after baking adds a bright, zesty finish.
For a spicier kick, add a pinch of red pepper flakes to the tomato mixture.
