Follow The Directions

01

Step
2 mins

Heat the olive oil in a large wok or skillet over high heat. (2 minutes)

02

Step
7 mins

Add the chopped escarole to the hot oil. Cook, stirring frequently, until the greens begin to wilt and become slightly tender. (5-7 minutes)

03

Step
1 mins

Pour in the lemon juice, then add the capers, salt, and olives. (1 minute)

04

Step
1 mins

Continue to cook and stir for another 15 seconds, allowing the flavors to meld together.

05

Step
1 mins

Season generously with freshly ground black pepper to taste. (30 seconds)

06

Step

Serve immediately, while the escarole is still warm and vibrant.

Ensure the escarole is thoroughly dried after washing to prevent the oil from splattering when cooking.
Taste and adjust the seasoning as needed. The amount of lemon juice and salt may need to be adjusted depending on the bitterness of the escarole and your personal preference.
For a richer flavor, consider adding a pinch of red pepper flakes along with the black pepper.
If you don’t have Kalamata olives, other brined olives such as Nicoise or Castelvetrano will also work well.
Pair this dish with grilled fish or chicken for a complete and healthy meal.

Make sure to dry the escarole really well, otherwise, it will be too watery.
