For a smoother sauce, you can use an immersion blender to puree the mixture after the rhubarb has softened. Be careful when blending hot liquids. If you prefer a less sweet sauce, reduce the amount of sugar to your liking. This sauce is delicious served warm or cold over ice cream, yogurt, pancakes, waffles, or even grilled chicken or pork.

Apr 10, 2025I used fresh rhubarb from my garden and it was the perfect way to use it up. The Jell-O adds a nice sweetness and the color is beautiful!
