Rinse shrimp thoroughly under cold water and pat dry with paper towels. Coarsely chop the shrimp and place in the bowl of a food processor. (5 minutes)

Add 1 lightly beaten egg, minced shallot, sesame oil, cornstarch, light brown sugar, fish sauce, minced garlic, salt, and pepper to the shrimp in the food processor. Blend until a smooth paste forms. Transfer the shrimp paste to a bowl and refrigerate for about 30 minutes to allow it to firm up slightly. (35 minutes)

Remove the shrimp paste from the refrigerator. Using an ice cream scoop, a tablespoon, or your hands, form the shrimp paste into uniform balls. (10 minutes)

Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring the water to a rolling boil. Add the shrimp balls to the steamer, cover, and steam until they turn opaque and are cooked through, approximately 5 minutes. Transfer the steamed shrimp balls to a plate and let them cool to room temperature. (10 minutes)

Place the bread crumbs in a bowl and season with salt and pepper. In a separate bowl, place the 2 beaten eggs. Roll each steamed shrimp ball first in the bread crumbs, then in the beaten eggs, and finally coat again thoroughly in the bread crumbs, ensuring a good coating. Place the coated shrimp balls on a plate. (15 minutes)

Heat the vegetable oil in a small pan over medium heat. Carefully cook the breaded shrimp balls until they are golden brown and crispy on all sides, turning occasionally to ensure even cooking. This should take about 5 minutes. Remove the cooked shrimp balls from the pan and place them on a plate lined with paper towels to drain any excess oil. Serve immediately with your favorite dipping sauce. (10 minutes)

For an extra crispy coating, consider using panko bread crumbs instead of fine bread crumbs.
Experiment with different dipping sauces to find your favorite pairing. Nuoc cham, hoisin-sriracha, or even a simple sweet chili sauce are all excellent choices.
Be careful not to overcrowd the pan when frying the shrimp balls to maintain the oil temperature and ensure even cooking.
