In a large, heavy-bottomed skillet or Dutch oven, heat olive oil over medium-high heat. Add the Italian sausage links and cook, turning occasionally, until browned on all sides (about 5 minutes). Transfer sausage to a plate and set aside.

Add the diced onion and bell pepper to the skillet and cook until softened, about 4-5 minutes. Add the minced garlic and cook until fragrant, about 45 seconds, being careful not to burn.

Pour ¼ of the diced tomatoes (with their liquid) into the skillet. Take the remaining tomatoes and blend until smooth using an immersion blender or regular blender. Pour the blended tomatoes into the skillet. Stir in the Italian seasoning, orzo, and chicken broth. Mix well to combine.

Bring the mixture to a simmer, then cover the skillet, reduce heat to medium-low, and cook for 10 minutes, or until the orzo is tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.

While the orzo is cooking, slice the cooked sausage into ½-inch thick coins.

Stir in the half-and-half and chopped spinach. Cook until the spinach wilts, about 2 minutes.

Add the sliced sausage, Parmesan cheese, and crushed red pepper flakes (if using). Stir until the cheese is melted and everything is well combined. Season with salt and pepper to taste. Serve immediately, garnished with extra Parmesan cheese.

For a richer flavor, use bone broth instead of chicken broth.
Add a splash of white wine when cooking the onions and peppers for extra depth of flavor.
To make this dish vegetarian, omit the sausage and add a can of drained and rinsed cannellini beans along with the spinach.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
