Toasting the almonds enhances their flavor and adds a delightful crunch. Spread the almonds in a single layer on a baking sheet and toast in a preheated oven at 350°F (175°C) for 5-7 minutes, or until lightly golden and fragrant. Let cool completely before chopping.
If you prefer a spicier salsa, leave some of the seeds in the jalapeno pepper or add a pinch of cayenne pepper to the citrus dressing.
This salsa is best when made with ripe, in-season melons for optimal sweetness and flavor.
