In a large bowl, cream together the shortening, 1 3/4 cups white sugar, egg yolk, and 2 teaspoons of vanilla extract until light and fluffy. Beat in the eggs one at a time, ensuring each is fully incorporated. In a separate bowl, whisk together the 2 cups of flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream and cold water, beginning and ending with the dry ingredients. Mix until just combined. Pour the chocolate batter into the prepared Bundt pan. (20 minutes)
