In a large, deep sauté pan or Dutch oven, heat olive oil over medium-high heat. (2 minutes)

Add diced onion and red bell pepper. Cook, stirring occasionally, until softened and lightly golden, about 5 minutes.

Add minced garlic and chili powder; cook, stirring constantly, until fragrant, 1 to 2 minutes.

Pour in diced tomatoes (with their juices) and chicken broth. Add drained hominy and bring to a simmer. (3 minutes)

Reduce heat to low, partially cover the pan, and simmer gently for 10 minutes to allow the flavors to meld.

Add pulled turkey, salt, and pepper to taste. Simmer until the turkey is heated through, about 5 minutes.

For a spicier stew, add a pinch of cayenne pepper or a finely chopped jalapeño along with the chili powder.
If you don't have leftover turkey, cooked chicken or even shredded pork works well as a substitute.
Serve with warm tortillas, a dollop of sour cream, or a sprinkle of shredded cheese for a complete meal.
This stew can be made ahead of time and reheated. The flavors actually improve after a day or two!
