Close and lock the lid. Select the Poultry setting according to the manufacturer's instructions; set the timer for 15 minutes. Allow 10 to 15 minutes for pressure to build. (Time: 2 minutes)

Release the pressure using the natural-release method according to the manufacturer's instructions, about 10 minutes. Unlock and remove the lid. (Time: 25 minutes)

Remove chicken and shred with two forks. Return chicken to soup. (Time: 5 minutes)

Ladle into individual bowls and top with crushed tortilla chips and your favorite toppings. (Time: 3 minutes)

For a smoky flavor, try using fire-roasted diced tomatoes.
Adjust the amount of chili powder to control the spiciness.
If you don't have an Instant Pot, you can simmer this soup on the stovetop for about 45 minutes to an hour, or until the chicken is cooked through.
This soup is even better the next day, as the flavors have time to meld together.
