Prepare the chicken and skewers: Cut the chicken into large cubes. Soak bamboo skewers in water. (5 minutes)

Marinate the chicken: Whisk together lemon juice, olive oil, lemon zest, garlic, thyme, rosemary, oregano, salt, and pepper in a large bowl. Add chicken and toss to coat. Cover and marinate in the refrigerator for at least 20 minutes. (20 minutes + marinating time)

Prepare the tzatziki: Mix yogurt, cucumber, garlic, olive oil, dill, vinegar, and salt in a small bowl. Refrigerate until ready to serve. (10 minutes + chilling time)

Preheat oven: Preheat oven to 450 degrees F (230 degrees C). Line two baking sheets with foil. (5 minutes)

Prepare the vegetables: Toss onion, bell pepper, olive oil, salt, black pepper, and garlic powder together in a bowl. Spread on one baking sheet. (5 minutes)

Skewer the chicken: Remove chicken from marinade and shake off excess. Skewer chicken and place on the remaining baking sheet. Discard marinade. (10 minutes)

Bake: Place chicken on the middle rack and veggies on the bottom rack. Bake for 15 minutes. Remove veggies. Turn on the broiler and broil chicken until browned, about 2 minutes. Ensure chicken reaches 165 degrees F (74 degrees C). (17 minutes)

Assemble the gyros: Remove chicken from oven and pull off skewers. Place chicken in pitas. Top with cooked veggies, tzatziki, and Sriracha. (5 minutes)

For best flavor, marinate the chicken for at least 2 hours, or even overnight.
Feel free to adjust the amount of Sriracha to your preferred level of spiciness.
Serve immediately for the best taste and texture.
