For an even crisper crust, place a baking sheet or cast-iron skillet on the bottom rack of the oven while preheating. Pour a cup of hot water into the pan just before baking to create steam. The dough is very wet and sticky, which is normal for Ciabatta. Don't be tempted to add more flour during the initial mixing. If your kitchen is particularly warm, reduce the initial rise time to prevent over-proofing.
