Shape the meat around the skewer to form a uniform log, approximately 6 inches long and 2 inches wide. Repeat with the remaining meat mixture. (20 minutes)

Place the kebabs on the hot grill. Cook until browned and cooked through, about 12 minutes, turning every 3 minutes or so to ensure even cooking. Use an instant-read thermometer inserted into the center of a kebab to check for doneness; it should read at least 145 degrees F (63 degrees C). (12 minutes)
