Follow The Directions

01

Step
20 mins

Combine lentils and water in a saucepan; bring to a boil. Cook lentils at a boil until tender, about 20 minutes; drain.

02

Step
5 mins

Mix kidney beans, corn, and parsley in a bowl; add lentils and gently stir.

03

Step
5 mins

Whisk olive oil, balsamic vinaigrette, sugar, salt, and black pepper together in a separate bowl; drizzle over lentil mixture and gently stir.

04

Step
1 hrs

Cover bowl with plastic wrap; refrigerate until lentils are completely chilled, about 1 hour.

For a richer flavor, toast the lentils in a dry pan for a few minutes before cooking.
Feel free to experiment with different types of beans and vegetables. Diced bell peppers, cucumbers, or cherry tomatoes would be great additions.
If you don't have balsamic vinaigrette on hand, you can make your own by whisking together balsamic vinegar, olive oil, Dijon mustard, and a touch of honey or maple syrup.
This salad tastes even better the next day, as the flavors have time to meld together.
