For a richer flavor, use browned butter. Simply melt the butter in the skillet and continue cooking until the milk solids turn golden brown and the butter smells nutty. Then, proceed with the recipe. If you prefer a less intense brandy flavor, you can flambe the brandy after adding it to the skillet. Carefully ignite the brandy with a long match or lighter. Allow the flames to subside before adding the sweet potatoes. This will burn off some of the alcohol but retain the brandy's aroma. These sweet potatoes can be prepared ahead of time. Cook them as directed and then cool completely. Store in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet over low heat, stirring occasionally, until heated through.
