Step

In a saucepan, combine 2 cups water, quinoa, and bouillon granules. Bring to a boil, then reduce heat to medium-low, cover, and simmer until quinoa is tender and water is absorbed (15-20 minutes). Spread quinoa on a baking sheet and refrigerate to cool (30 minutes). Rinse the saucepan.

Place lima beans in the saucepan and cover with water by 1 inch; season with salt and pepper. Cover and bring to a boil. Reduce heat to medium and simmer until tender (3-4 minutes). Drain and rinse under cold water; refrigerate to cool (10 minutes).

Toast almonds in a skillet over medium heat until golden brown (5 minutes). Remove from heat and cool (5 minutes).

In a large bowl, combine cooled quinoa, lima beans, toasted almonds, diced tomatoes, scallions, and mozzarella cheese.

In a small bowl, whisk together balsamic vinegar, almond oil, olive oil, Italian seasoning, basil, garlic, and salt until emulsified. Pour over quinoa mixture and toss to coat.

For an extra layer of flavor, try marinating the mozzarella in the balsamic vinaigrette for 30 minutes before adding it to the salad.
Feel free to experiment with other herbs and vegetables. Fresh parsley, mint, or cucumbers would be delicious additions.
To make this salad vegan, substitute the mozzarella with marinated artichoke hearts or sun-dried tomatoes.
