Follow The Directions

01

Step

Preheat the oven to 375 degrees F (190 degrees C). (5 minutes)

02

Step

In a large bowl, gently combine the ground lamb, torn bread, yogurt, golden raisins, chopped cilantro, minced garlic, dried oregano, dried basil, salt, and pepper. Mix until just combined; avoid overmixing to keep the meatballs tender. (10 minutes)

03

Step

Using your hands or a small ice cream scoop, form the mixture into 1-inch meatballs. Place the meatballs on a lightly greased baking sheet, leaving a little space between each one. (10 minutes)

04

Step

Bake in the preheated oven until the meatballs are nicely browned on the outside and cooked through, about 20-25 minutes. The internal temperature should reach 160 degrees F (71 degrees C). (25 minutes)

05

Step

Let the meatballs cool slightly before serving. Garnish with extra fresh cilantro, if desired.

For extra flavor, try soaking the golden raisins in warm water or a splash of rum for 15 minutes before adding them to the mixture.
If you don't have fresh cilantro on hand, you can substitute 1 tablespoon of dried cilantro. But fresh is recommended.
These meatballs are delicious served with a dollop of extra yogurt or a drizzle of tahini sauce.
The bread helps to keep the meatballs moist, but you can substitute with breadcrumbs. If using breadcrumbs, you may need to add a bit more yogurt to maintain moisture.
