Carefully flip the cabbage steaks. Drape 1 to 2 bacon slices over each steak, ensuring the bacon covers as much surface area as possible. Sprinkle brown sugar evenly over the bacon-topped steaks. (5 minutes)

Return to the oven and continue roasting until the cabbage is tender and the bacon is crisp and caramelized, approximately 30 minutes more. (30 minutes)

Remove from the oven and let rest for a few minutes before serving. The resting period allows the flavors to meld and the cabbage to soften slightly.

For a vegetarian option, omit the bacon and brown sugar. You can brush the cabbage steaks with a mixture of balsamic vinegar and maple syrup during the last 15 minutes of roasting for a similar caramelized effect.
Thick-cut bacon is recommended as it renders more slowly and crisps up nicely without burning. If using thinner bacon, reduce the final roasting time by 5-10 minutes.
Don't overcrowd the baking sheet; roast in batches if necessary to ensure even cooking and browning.
For extra flavor, consider adding a pinch of red pepper flakes along with the salt and pepper.
