Follow The Directions

01

Step

Preheat your oven to 375°F (190°C). Lightly coat an 11x7-inch baking dish with cooking spray.

02

Step

In a large skillet over medium heat, toast the oats, stirring frequently, until they turn light brown and release a nutty aroma (approximately 4 minutes). Incorporate the cinnamon, ginger, allspice, nutmeg, and cardamom; continue toasting, stirring constantly, for another 1 to 2 minutes. Transfer the spiced oats to a mixing bowl and allow to cool slightly.

03

Step

Add 3/4 cup of the pecans, baking powder, and salt to the oat mixture; stir until well combined.

04

Step

In a large microwave-safe bowl, melt 3 tablespoons of butter. Whisk in 6 tablespoons of brown sugar. Add the milk, egg, and vanilla, whisking until the mixture is smooth. Gently fold the oat mixture into the milk mixture, ensuring even distribution. Fold in half of the diced apple pieces. Pour the mixture into the prepared baking dish.

05

Step

Bake in the preheated oven until the oatmeal is golden brown and set, about 35 to 40 minutes.

06

Step

While the oatmeal bakes, melt the remaining butter in a nonstick skillet over medium heat. Add the remaining apple pieces, brown sugar, and maple syrup. Cook, stirring occasionally, until the apples soften and the liquid thickens into a luscious syrup, approximately 8 to 10 minutes.

07

Step

Once the baked oatmeal is removed from the oven, spoon the warm apple mixture evenly over the top. Garnish with the remaining pecans for added texture and flavor.

For a richer flavor, use melted coconut oil instead of butter to grease the baking dish.
Feel free to experiment with different apple varieties, such as Fuji or Gala, based on your preference.
For a vegan variation, substitute the milk with almond milk and the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 5 minutes).
The baked oatmeal can be stored in the refrigerator for up to 3 days. Reheat individual portions in the microwave or oven.
